What you need

  • 1/2 cup vegetable oil
  • 1/3 cup chopped onion
  • 5 cloves of garlic, minced
  • 1/2 cup flour
  • 4 tbsp nutritional yeast
  • 4 tbsp light soy sauce
  • 2 cups vegetable or mushroom broth
  • 1/2 tsp dried sage
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

Do this

  • Heat oil in a saucepan over medium heat
  • Sauté onions and garlic until soft and translucent (~5 minutes)
  • Add flour, nutritional yeast, and soy sauce to form a smooth paste
  • Gradually whisk in the broth
  • Season with sage, salt and pepper
  • Bring to a boil
  • Reduce heat and simmer, stirring constantly for 8-10 minutes until thickened.
